What makes Balkan cooking quietly healthy

The Balkan table is one of Europe's most underrated longevity kitchens. Across Serbia, Croatia, North Macedonia, Bulgaria and Bosnia, the everyday pattern is the same: vegetables cooked slowly in olive or sunflower oil, beans and lentils as a main rather than a side, cultured dairy at almost every meal, grilled rather than fried protein, and fresh herbs and peppers used in volume. Meat appears, but it is a component instead of the centre — a few skewers alongside a bowl of ajvar and a plate of tomatoes, not a slab on its own.

Cultured dairy does a lot of the work here. Tarator, kefir and thick strained yoghurt appear on the table daily, which keeps meals satisfying without heavy sauces. Roasted peppers and aubergine — the base of ajvar and countless winter preserves — deliver fibre and potassium at very little caloric cost, and dishes like tavče gravče show what a pot of beans can do when it is treated as the main event. Blitva with potato, a Dalmatian coastal staple, is little more than chard, olive oil and garlic, and it remains one of the best greens preparations in the Mediterranean basin.
