    Toss the cauliflower with olive oil and half the za'atar; roast at 220°C / 425°F for 25 minutes.

    Meanwhile sweat onion and spices in a heavy pot until deeply aromatic.

    Add lentils and stock, cover, and simmer 25 minutes until tender.

    Fold in chickpeas and preserved lemon and cook a further 5 minutes.

    Crown with the roasted cauliflower, dust with the remaining za'atar and rest 5 minutes before serving.
