    Combine the lukewarm water, yeast and honey in a large bowl and leave five minutes until frothy.

    Add the olive oil, sea salt, spelt flour and seeds, stirring with a wooden spoon until a cohesive, sticky dough forms.

    Turn out onto a lightly floured surface and knead five to seven minutes until elastic.

    Place in a lightly oiled bowl, cover with a damp cloth and prove in a warm spot for one hour until doubled.

    Knock back gently, shape into an oval, set in a lined loaf tin and press extra seeds over the top.

    Bake at 190°C / 375°F for 35 to 40 minutes until deep golden and hollow-sounding underneath, then cool on a rack before slicing.
