Almond Meal Berry Scones
Low-glycemic, gluten-free scones with slow-release almond energy.
Naturally gluten-free, lightly sweetened with maple and bursting with antioxidant wild berries.
Ingredients
- 200 gfine almond meal
- 30 gcoconut flour, to absorb moisture
- 60 mlpure maple syrup
- 60 mlmelted coconut oil
- 2large pasture-raised eggs
- 4 gbaking powder
- 2 gsea salt
- 5 mlpure vanilla extract
- 75 gfresh wild blueberries or raspberries
Method

Preheat the oven to 180°C / 350°F and line a baking sheet with parchment paper.

Whisk the almond meal, coconut flour, baking powder and sea salt together in a large bowl.

In a second bowl whisk the eggs, maple syrup, melted coconut oil and vanilla until smooth.

Pour the wet mixture into the dry and stir gently until a thick dough forms, then fold in the berries so they stay whole.

Turn the dough onto the parchment, shape a 15 cm / 6 inch round about 2.5 cm thick, cut into 6 wedges and pull them slightly apart.

Bake 18 to 20 minutes until golden at the edges and firm to the touch, then cool completely before serving.
