Persian Herb & Lentil Stew with Saffron Yoghurt
Slow-braised greens, brown lentils and grilled aubergine; deeply plant-rich.
Ingredients
- 200 gbrown lentils, rinsed
- 200 gspinach, parsley and coriander, chopped
- 1 largeaubergine, sliced into rounds
- 2dried limes, pierced
- 1 tspground turmeric
- 45 mlextra virgin olive oil
- 150 gthick yoghurt with a pinch of steeped saffron
Method
- 01
Brush the aubergine with oil and grill 4 minutes per side until smoky and yielding.

Sweat the turmeric in the remaining oil for 30 seconds to bloom its aroma.

Add the lentils, dried limes and 700 ml water, then simmer 25 minutes until tender but intact.

Stir in the chopped greens and cook a further 10 minutes so the stew turns dark and glossy.

Season, then rest off the heat for 5 minutes to let the sourness settle.

Serve with the grilled aubergine on top and a spoon of saffron yoghurt.
