Matcha Chia Seed Pudding
Ceremonial grade matcha, coconut milk, chia and fresh raspberries.
Ingredients
- 60 gchia seeds
- 500 mlunsweetened coconut milk
- 6 gceremonial grade matcha
- 20 mlraw honey or maple syrup
- 150 gfresh raspberries
Method
- 01
Sift the matcha, then whisk with 100 ml of the coconut milk until glossy and lump-free.

Add the remaining milk and sweetener and whisk again.

Stir in the chia seeds, wait five minutes, then stir once more to stop them clumping.

Refrigerate at least 4 hours or overnight until set to a spoonable, silken gel.

Layer into glasses and crown with raspberries.
