Imqaret-Inspired Date, Orange & Ricotta Bowl
The flavours of Malta's date pastry, rebuilt without frying, flour or refined sugar.
Ingredients
- 150 gMedjool dates, pitted and torn
- 1orange, zest and segments
- 2 ganiseed, lightly crushed
- 300 gfresh sheep's ricotta (irkotta)
- 30 gtoasted almonds, crushed
- 10 mlraw honey
Method
- 01
Warm the dates with the orange zest, aniseed and a tablespoon of water until glossy and jammy.

Crush lightly with a fork so the mixture holds together like an imqaret filling. Cool slightly.

Whip the ricotta with the honey for 30 seconds until airy.

Spoon the ricotta into bowls and hollow the centre with the back of a spoon.

Fill with the warm date paste, add orange segments and finish with toasted almonds.
