Turmeric-Ginger Wild Salmon & Bok Choy Bowl
Over purple black rice — anthocyanins with anti-inflammatory curcumin.
Ingredients
- 2 × 150 gwild salmon fillets
- 150 gblack (forbidden) rice
- 200 gbaby bok choy, halved
- 10 gfresh turmeric, grated
- 15 gginger, grated
- 15 mltamari
- 10 mltoasted sesame oil
Method
- 01
Rinse the black rice and simmer in plenty of water for 30 minutes until tender but chewy. Drain.

Whisk turmeric, ginger, tamari and half the sesame oil; coat the salmon and rest 10 minutes.

Sear the salmon skin-side down in a hot dry pan for 4 minutes, then finish 3 minutes off the direct heat.

Steam the bok choy 3 minutes until the stems are just yielding and the leaves stay emerald.

Build bowls of rice, greens and salmon; spoon over the pan juices and remaining sesame oil.
