Popped on a clay comal, bound with maguey honey.

Ingredients

  • 150 g amaranth grain
  • 60 ml maguey syrup or raw honey
  • 2 tbsp toasted pumpkin seeds
  • 1 tbsp ground chia
  • Pinch of salt
  • Optional: ½ tsp ground cacao

Method

  1. 1Heat a clay comal until a drop of water skitters across it.
  2. 2Add amaranth a tablespoon at a time; it pops within seconds — sweep it off immediately or it burns.
  3. 3Warm the syrup until it threads from the spoon.
  4. 4Work the popped grain, seeds, chia and salt into the syrup while hot.
  5. 5Press firmly into a shape on a damp board and leave to set before breaking into pieces.
